Food Hygiene Training

Food business operators must ensure that all food handlers engaged in your food business are supervised, instructed and/or trained in food hygiene matters as necessary, bearing in mind the type of work they do.

Staff who handle food should appreciate the essentials of food hygiene before starting work, this should include:

  • Personal hygiene
  • Fitness to work
  • Temperature control
  • Cross contamination
  • Cleaning procedures
  • Labelling and other safety instructions

Staff that handle food should then receive further instruction from a competent person on the following within 4 weeks of starting work

  • Temperature
  • Food poisoning
  • Personal health and hygiene
  • Cross contamination
  • Food storage
  • Waste disposal
  • Foreign body contamination
  • Awareness of pests
  • And any control or monitoring points identified by your food safety management procedure.

Staff with a supervisory role and handle open food which is high risk must have training equivalent to the Chartered Institute of Environmental Health (CIEH) Foundation level food hygiene certificate within 3 months of starting work.

We are not running courses at present, however, if you have access to a computer then foundation level training on CD-Rom is available from us as an alternative.  The cost of the training is £18.00 per trainee plus a £25.00 refundable deposit for the CD when returned.  For more information please contact Nicky Piper on 01258 484381.

Foundation level food hygiene courses are provided locally be the following establishments and independent trainers.  Some of whom also provide higher level training in food hygiene and training in health and safety.
